Observation (CORRECTED DURING INSPECTION): Surface sanitizer was not setup at the time of inspection.
Corrective Action(s): Person in charge setup 100 ppm chlorine sanitizer in a bucket with wiping cloths. They mentioned that they would change it frequently (at least 3 times) per day to maintain 100 ppm chlorine sanitizer. Re-sanitize all prep. surfaces.

Comments

Handsink in the food prep. area and washrooms were adequately supplied with liquid soap, hot and cold running water, and paper towels.
Ceiling tiles in the washroom were installed where they were previously missing.
Air drying rack was installed over the 2-compartment sink.
Dishwasher final rinse temperature was 78.4 degrees C (71 degrees C or hotter) at the plate.
Glass door cooler was at 2.9 degrees C (4 degrees C or less).
Prep. cooler was at 2.1 degrees C (4 degrees C or less).
One door cooler was at 2.4 degrees C (4 degrees C or less).
Chest freezer and upright freezer temperatures were -18 degrees C or less.
Refrigeration units were equipped with thermometers.
No signs of recent pest activity were observed at the time of inspection.
Note: Ice machine scoop was was stored over a napkin in the container. Person in charge removed the napkin and rewashed the ice scoop and container at the time of inspection. Reminder: Ensure all in-use utensils (e.g. ice scoops and the storage container/surface) are washed, rinsed, sanitized, and air dried at least every 4 hours.
