Observation: Food debris noted along walls, behind/under equipment, ontop of equipment, etc. Items not being properly stored in designated areas - single use towels, chemical spray bottles being kept ontop of service lines.
Corrective Action(s): Cleaning schedules are to be followed. Ensure all areas are being cleaned on a regular basis.

Observation: Service line - under counter prep line not functioning. Structurally - deteriorating surfaces noted. (Damaged walls/flooring)

Comments

- Temperature Control: Monitoring audits reviewed. Temperature gauge inside upright refrigeration unit is to be kept securely fastened inside unit.
- Mechanical Dishwasher: Low Temp (chlorine) = Ok. Ensure all food contact surfaces (tongs, spatulas) are being washed and disinfected after use or on a timely manner. All items are to be stored in a sanitary manner in order to prevent post contamination.
- Wiping cloth storage: Limit the amount of cloths being used at any time.
- Food Storage: Storage shelves are to be kept clean and organized. Ice bin protection in front drive thru service area discussed. Egg storage discussed. (ie: Refrigeration/less than 2 hours at room temperature)
- Sanitary Facilities: Ok. Single use towels are to be kept stored in the handsink dispensers only. No towels are permitted to be stored on prep lines.
- Chemical Storage: Ok.
- Staff Hygiene: Discussed.
- Sanitation: Refer to Violation Notes.
- Pest Control: An active Pest Control Program is in place. Records reviewed. Sanitation is part of an effective pest control program.
- Garbage, Recycling and Composting Disposal: All items are to be kept stored in covered, rodent proof containers.
- Structurally: All surfaces are to be kept in good repair.
- Ice Machine: Cleaning and disinfection discussed.
- Slicer: Cleaning and disinfection reviewed.
- Food Safe Trained staff on site.
- Corporate Food Safety Plan and Sanitation Plan is on site for reference.
