Comments

* Ensure to clean all food debris from underneath all storage shelves in the dry storage room.
* Pull out all storage bins and boxes to clean floor underneath and behind all bins and boxes
* Move upright coolers and freezers along the back wall to clean floors underneath and behind
* Clean floor underneath and behind all coolers and other equipment in both front serving area and the cooking area.
* Seal or patch any holes or openings in the walls in order to prevent rodent entry. Keep on monitoring for any signs or rodent activity.
* All food items must be kept covered in tightly closed bins especially at night time.
* Cleaning required in and around the waste collection bins to discourage pests.

* Recommended the use of separate colored bus pans ( e.g. white or green) for storing salad greens or any ready to eat foods.
