Corrective Action(s): 1) Service your walk in immediately
2) Keep products at back of sandwich cooler closer to condenser air release
3) Use an air curtain that is transparent so customers can still see your product. Current curtain obscures customer views and is contributing to its lack of use

Hot held soup >60C
Dishwasher reached 72C on rinse cycle.
**Temperature records are on site and in use, however do not appear to be accurate. Months of readings are identical. While not impossible, highly improbable.
Spot check of equipment satisfactory. As discussed, meat slicer would benefit from a pipe cleaner style brush to better access hard to reach areas of this machine.
Ice machine was not checked as a screw driver was not available on site. Please keep one on site so cleaning can be verified by management and inspectors! This machine is part of a maintenance cleaning schedule not done by kitchen staff.
General sanitation of facility is good. No evidence of pests.
