- Hand washing sink properly supplied with liquid soap and paper towels - Bleach sanitizer solution in pails for storing wiping cloths were tested at 200 ppm chlorine. - High-temperature dishwasher reached 75C at the dish surface during the rinse cycle. - All coolers were maintaining temperatures of 4C or colder. - Freezers were maintaining temperatures of -18C or colder. - Accurate thermometers available. Temperature records well maintained and up to date. - Food storage practices were satisfactory. All food stored properly covered and off the floor. - Dry storage room satisfactory.
