Observation (CORRECTED DURING INSPECTION): Two bus pans of blanched fries sitting on a shelf at room temperature. 40 Celsius internal temperature.
Move blanched fries to fridge. Blanched fries are potentially hazardous.

Observation: The area at the back of the kitchen for cutting fries is actually outside of the building. It can't be protected from rodents and it has no hand washing sink. Unsure of where the drain goes - possibly storm sewer? To be investigated.

Observation: Food prep surfaces are mostly clean but many hard to reach corners and shelves are dirty. Of note, the shelves where the blanched fries were stored were very dirty. Clean.

Proper 3 compartment sink dishwashing observed. 100 ppm bleach in 3rd sink. Good.
No obvious signs of rodents in kitchen.
Hand sink stocked and working.
Fridges are under 4 Celsius.
