Observation (CORRECTED DURING INSPECTION): Coleslaw salad container, bag of cheese noted at 10 C in bottom of broken prep cooler.
Corrective Action(s): Ensure all PHF are maintained at or below 4 C. Operator is putting inserts on ice until cooler unit is serviced. Until unit is repaired do not store PHF in unit unless on ice. Large containers of product must be stored in large walk in cooler until insert requires filling. No PHF stored over night or in underside of prep cooler until cooler repaired.

Observation: No paper towels available at back hand washing sink. Hot & cold water, liquid soap available - clear of obstruction during inspection.
Corrective Action(s): Ensure all handwashing sinks are supplied with hot & cold water, liquid soap and paper towel and free of obstruction. Add paper towel dispenser to area near handsink for easy access during handwashing.

Observation: 1.Ceiling above side kitchen door still full of dust debris (black all around ceiling fan)

Corrective Action(s): Ensure areas noted are routinely cleaned.

Observation: Loose wooden base board removed from side bar, hole with white plastic cover still in place. Removed cover - electrical work with insulation present (appears to be incomplete job).
Corrective Action(s): Ensure premise is completed as per approved plans - all premise surfaces are smooth, durable, non absorbent and easy to clean. Re install baseboard and complete electrical work (install proper cover around hole).

-No signs of pest activity noted during inspection
-interior of ice machine appears to be maintained in sanitary condition - outside of unit requires additional cleaning

***Premise requires proper work station and prep area for raw chicken and dirty chicken racks. Current prep area blocks back handsink and dirty racks stored on ice machine not satisfactory storage location. Requires revised plan. Operator looking into installing a table or counter above ice machine and digresser vat.


***Operator will email information about egg tarts (FSP) about how long they can be at room temp.
