Observation:
There are cracked and chipped floor tiles in the cooking station area (below the deep fryer and red bean mixer). The floor is no longer sealed or cleanable, this will attract pests.
Corrective Action(s):
1) Remove all damaged floor tiles and install new floor tiles.
2) Fill and seal all gaps between floor tiles with grout.

Comments

A routine inspection was completed:
- Chips and red bean buns being produced in the the premises.
- Chips are made of flour and tofu,and then deep fried, packaged, and shipped to retailer.
- Red bean buns are made, steamed, cooled, packaged, frozen, and shipped to retailer.
- Dried red beans are soaked for 24 hours, then cooked/boiled 2x in hot water for 5 minutes, then placed in a mixed that crushes them and sugar is added to make it into a paste.
- Red bean paste is made in large batches. The paste is frozen until needed to make an order of buns.
- Freezer was -18C; thermometer present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach sanitizer in spray bottle and wiping cloth had [Cl2] above 200ppm. Mix 1 Tbsp of bleach with 4 Litres of water, or 1 tsp of bleach with 500mL of water (spray bottle).
- All foods stored in food grade containers; covered; date coded; foods stored in groups and foods stored 6" off the floor.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good. No signs of pests.
- Exhaust canopy was professionally cleaned this month. Next service due in September 2023 as per service sticker.
- Staff clean the exhaust canopy filters when accumulation of grease is observed.
- Owner's FoodSafe certificate has expired. Recommended he take the course again.

**Reminder: Purchase kitchen floor degrease (soap) to wash the floor. Do NOT use powdered laundry soap to clean the floor as it doesn't have enough degreaser in it remove grease.****
