Observation (CORRECTED DURING INSPECTION): Chicken thighs are stored on the rack by handsink for reheating when customers order food.
Corrective Action(s): Directed staffs to relocate the chicken as they should be kept in the cooler and pieces should be taken out when order is made.

Observation: 1) Exhaust hood filters have grease build up and floors under cooking area is also collected with food debris. 2) Some coffee splashes are noted in the ice machine.
Corrective Action(s): 1) Service exhaust hood and ensure filters are cleaned at least once to twice a week. Have technician service the grease collecting insert as a leaky black mark is shown where grease is dripping. 2) Clean and sanitize the ice machine.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation (CORRECTED DURING INSPECTION): Observed a food handler making spring rolls using a temporary metal surface placed on the ground. This set up is in front of the mop sink and back door where the back hallway is narrow and crowded.
Corrective Action(s): Floor is not an adequate location to make food as this is unsanitary. Setting up food prep area in front of the back door is also a fire hazard as there is no access to the back door. Directed staff to use prep table onsite and schedule food handlers to make spring rolls during hours when the business is slow and there is prep table available.

Observation: Several personal items being left throughout the kitchen and they are not used for the business operation (e.g. hair spray, frozen blueberries etc.). Repeat.

Note: please reorganize the cooler and freezer so items can be retrieved easily. Food containers such as plastic beverage containers should not be stored in the washroom. Use existing shelving units.
