Observation (CORRECTED DURING INSPECTION): No sanitizer solution was available/prepared for sanitizing food contact surfaces such as food prep tables. 200ppm QUATS sanitizer solution was brought onsite during inspection.
Corrective Action(s): To ensure adequate cleaning and sanitation of food contact surfaces, have an approved food grade sanitizer onsite during facility operation.

Observation: Structural changes have been made to the facility without prior approval from Fraser Health.Changes include extension of walk in cooler, additional storage space and location change for 3 compartment dishwashing sink.
Corrective Action(s): Prior to making any structural change, a proposed floor plan must be submitted to Fraser Health for review and Health approval. Please submit an updated floor plan reflecting the new structural changes and addition of any new equipment.

Observation: Back kitchen area is cluttered and requires re-organization of equipment/shelving units.
Food spills observed on the wall
Corrective Action(s): De-clutter and re-organize all the equipment to facilitate regular cleaning of the kitchen area including corners and along the walls.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation: 1. Stainless steel shelving unit in walk in cooler was lined with cardboard that could absorb moisture over time and can harbour pathogen. It would also hinder cold air circulation within the cooler.
2. The shelving unit used for storing dry food is not made of treated wood as previously stated by the Operator and can absorb moisture.
Corrective Action(s): - Please remove the cardboard sheets from the walk in cooler.
- Ensure that the shelving units are made of smooth, non-absorbable and easy to clean material.

Comments

Routine inspection conducted.

Observations:
- Temperature of coolers maintained at or below 4C
- Freezers were maintained at or below -18C
- Handwash sink available and had adequate supply of hot and cold running water, liquid soap and single use paper towels.
- 3 compartment dishwashing sink present and used for manual dishwashing. Drain plugs and bleach sanitizer available.
- Food products were properly covered and stored in walk in cooler.
- Staff has valid FOODSAFE Level 1 certificate.
- Pest Control Company conducts regular checks. Inspection report was verified during inspection.

NOTE: Unable to assess the back kitchen area for any rodent activity.

This is the SECOND TIME that the structural changes have been made without obtaining Health approval from Fraser Health. Prior to making any structural change, please submit the proposed floor plan to your district EHO for review. Failure to comply with the Food Premises Regulationin future may result in enforcement action which can include CLOSURE/CORRECTION Order, violation ticket, fines.
