Observation (CORRECTED DURING INSPECTION): 200 ppm bleach sanitizer was available in a bucket with wiping cloths. However, staff were wiping food prep surfaces using wiping cloths containing water only. Wiping cloths measured 0 ppm chlorine.
Corrective Action(s): Ensure wiping cloths contain bleach sanitizer when they are used to wipe down food prep surfaces. Store wiping cloths in the bucket of bleach sanitizer so they are readily available when needed. Without sanitizer, bacteria cannot be effectively killed.

- Bulk food container next to the dishwasher has been moved
- Scoops are now stored outside of the bulk food bins
- 200 ppm bleach sanitizer is available with wiping cloths
- Knives are cleaned and sanitized after use. Ensure the knife storage slot is cleaned and sanitized regularly.
