Observation (CORRECTED DURING INSPECTION): Bleach sanitizer pail had no detectable chlorine disinfectant. Sanitizer pail was all cloudy from use.
Corrective Action(s): Bleach sanitizer must be maintained at 100ppm to properly disinfect food contact surfaces. Sanitizing solution must be changed throughout the day. Sanitizer solution was changed and tested at 100ppm at the time of inspection.

209 - Food not protected from contamination [s. 12(a)]
Observation: 1) Box of meat was stored on the floor, next to the dishwasher and a large cooking pot was placed on top of the box.
2) Opened metal can of sauce was stored in the 3-door cooler unit.
Corrective Action(s): 1) Foods must be stored off the ground and protected from potential contamination. Box of meat was relocated to a counter at the time of inspection.
2) Canned foods, once opened, must be transferred into food grade containers with proper covers. Discontinue the practice of storing foods in opened metal cans.

210 - Food not thawed in an acceptable manner [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Frozen meat was thawing at room temperature on top of the chest freezer.
Corrective Action(s): Frozen potentially hazardous foods must be thawed in a cooler at 4C or less or under cold running water. Food was still frozen and transferred into a cooler at 4C at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Back door was left open after deliveries were completed.
Corrective Action(s): Ensure back door is kept closed to prevent potential entry of pests. After deliveries have completed, back door is to be closed. Back door was closed at the time of inspection.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation (CORRECTED DURING INSPECTION): 2-door cooler was at 6C.
Corrective Action(s): Cold holding units must be able to maintain 4C or less on a consistent basis to prevent the growth of pathogens and or the formation of toxins. Cooler unit was adjusted at the time of inspection and temperature was decreased to 4C.

Comments

-3-door cooler was at 4C.
-Both prep coolers were at 4C (top and bottom).
-Chest freezer was at -18C.
-Upright freezer was at -15C.
-Hot holding was greater than 60C.
-Pho broth cooled in smaller containers (half filled 20L pails) - broth was probed at 4C.
-Sprouts were stored in a refrigeration unit.
-High temperature dishwasher had a final rinse temperature of 71C on the dish surface (minimum of 71C required for proper sanitizing).
-Bleach spray bottle labelled and tested at 100ppm.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Deli slicer was found to be clean and sanitary.
-Ice machine was found to be clean and well maintained.
-General sanitation satisfactory at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-FoodSafe Level 1 valid until Jan 19, 2021.
