305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)] Observation: Observed backdoor propped open at the time of inspection. When closed, the door had sufficient gap to allow pests into the premises. Corrective Action(s): Required operator to have the backdoor closed and install a sweep on the bottom to prevent pests from entering the premises. Overall sanitation satisfactory Hand washing stations stocked with liquid soap and paper towel Hot and cold running water available at all sinks Low temperature dishwasher in good working order; detected 100 ppm of residual chlorine at plate level after final rinse cycle Sanitizer bucket available and in use; detected 200 ppm of chlorine residual when tested with test strips. All coolers at 4 C or lower; all freezers at -18 C or lower. No hot holding units at the time of inspection **Noted large pots of curry/butter chicken at the time of inspection. Internal temperature exceeded 80 C when measured. Operator indicated that they are cooling them down for an hour before they put them into the walk-in cooler. Education provided that ice/cooling wand should be used to cool down the internal temperature quicker.** No sign of pests noted at the time of inspection
