Observation: Salad ingredients were kept at 8C in the salad prep cooler. These were just taken out of the walk-in cooler as the restaurant had just opened.
Corrective Action(s): Keep only enough food in the salad prep cooler to last for 2 hours. Repair the salad prep cooler so it is able to maintain ambient temperatures of 4C or less. Operator called for repairs services during inspection. A technician arrived at the end of inspection. Date to be corrected by: Immediately
