Observation (CORRECTED DURING INSPECTION): Raw eggs (11.2'C) and milk (7.8'C) had internal temperature >4'C. Temperature records taken before lunch at 2'C. Both moved to upstairs cooler and cooler temperature was adjusted at this time.
Corrective Action(s): Monitor the temperature of cooler at 12:30pm. If not at or below 4'C, contact the and do not use the cooler until repaired.

Temperature monitoring is done every morning. However, due to temperature fluctuation occurring during lunch, ensure to monitor during the day as well - before dinner.

Observation (CORRECTED DURING INSPECTION): Old rat droppings (~4) observed from the corner of food storage room. Staff had removed them and cleaned the area at this time.

Observation: Domestic dishwasher remains as unrepaired. Owner had advised facility would follow manual dishwashing method at least for the next year or so.
Corrective Action(s): Ensure to contact the health inspector to update, once the facility decides to obtain a new dishwasher.

Routine inspection conducted:

-Handwash station adequately supplied.
NOTE: Ensure the dispenser is filled with paper towels, instead of napkins or obtain a holder.
-200ppm chlorine solution available in a spray bottle. Ensure all prep surfaces are sanitized prior to preparing foods in kitchen.
-Refrigeration temperatures satisfactory. Temperature monitoring system in place. Records checked.
-Domestic dishwasher not in use. Manual dishwashing method poster displayed for staff. Facility equipped properly for manual dishwashing at this time.
-General food storage practice satisfactory. General sanitation satisfactory at this time.

Recommended: Post instruction on wall for staff regarding proper cooling/reheating method for left overs.
1) All hot foods should be cooled from >60'C to 20'C within 2 hours and from 20'C to 4'C within the next 4 hours.
2) Check the internal temperature using the thermometer.
3) When reheating foods, ensure to reheat until the internal temperature is at 74'C.

Facility serves Breakfast/Lunch/Dinner. Based on the complexity of foods prepared/served, the number of residents and the compliance level, facility is allowed to follow manual dishwashing until a new dishwasher is obtained in future. However, in any cases where the Health Inspector finds this practice is not followed properly, or requires a change, facility may be required to replace the dishwasher any time.
