Observation (CORRECTED DURING INSPECTION): Some cans (especially for a beef broth) appeared dented.
Corrective Action(s): Operations Manager had staff remove the dented cans from the point of sale area and is to return it to the supplier. Ensure any dented or bulging cans are rejected during the receiving step and are not sold on-site.

205 - Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Red bean buns, sliced squash, and sliced fruit misc were observed stored at room temperature without any time or temperature controls.
Corrective Action(s): Sliced squash and sliced fruit misc were re-located into a refrigeration display cooler at or below 4 degrees C. Red bean buns at room temperature above 4 degrees C for more than 2 hours were removed from the point of sale.

Ensure cold potentially hazardous food (including sliced fruit or sliced vegetables) is stored/displayed at or below 4 degrees C. Time tracking controls for the red bean buns up to 4 hours maximum at room temperature prior to discarding them were discussed with the Operations Manager.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Handsink on P2 (near the walk-in-freezer) lacked liquid soap.
Corrective Action(s): Operations Manager re-stocked the handsink with liquid soap during the inspection. Ensure all handsinks are kept supplied with liquid soap, hot and cold running water, and single-use paper towels.

Comments

Back storage areas:
Walk-in-cooler was at or below 4 degrees C and it was equipped with a thermometer.
Walk-in-freezer (on level P2) was at or below -18 degrees C and it was equipped with a thermometer.
Fan covers appeared clean. Fan covers are cleaned on a monthly basis according to the Operations Manager.
Food products were covered inside the walk-in-cooler and walk-in-freezer.
Raised receiving area doors were closed between use.

Produce re-packaging area:
Handsink was supplied with liquid soap, hot and cold running water, and single-use paper towels.
2-compartment sink was supplied with hot and cold running water. One sink plug was available. Note: Operations Manager is to add a second sink plug at this sink.
Manual wash, rinse, sanitize, and air dry procedures were reviewed for knives and prep. tables. Only a few products (e.g. squash and cabbage) are washed and then sliced prior to re-packaging.
Knives on the magnetic strip appeared in a clean condition in the produce re-packaging area.
100 ppm chlorine sanitizer was available in the sanitizer pail with wiping cloths.
Note: Fly trap (containing dead flies on it) was removed from the ceiling near a prep. table where produce is re-packaged to prevent any dead flies from potentially falling into the produce.

Retail store:
Refrigeration units containing cold potentially hazardous food were at or below 4 degrees C.
Freezers were at or below -18 degrees C.
Refrigeration units and freezers were equipped with thermometers.
Products were covered in intact packaging without visible signs of damage at the time of inspection.
Food storage areas appeared clean and organized.
Pest control program is in place via Atlas Pest and Wildlife Control Ltd on a minimal monthly basis and on a weekly basis when activity is noted.
Most recent pest control service report dated November 2, 2022 indicated no pest activity inside the food premises with some rodent activity indicated exterior of the food store.

Signature is not required on this report due to the COVID-19 pandemic.
