Observation:
1. Inside of the back prep cooler is in need of cleaning.
2. Ventilation canopy requires a deep cleaning. Service of the ventilation hood is due for July 2021.
Correction:
1. Clean inside of the back prep cooler, including the rubber seals.
2. Clean panels and accessible areas of the ventilation canopy. Ensure the ventilation hood is cleaned frequently to prevent a fire hazard.

Follow-up Inspection:
Panels of ventilation canopy have been cleaned.
Inside of prep cooler has been cleaned, however the very back wall of the cooler needs a little more scrubbing.
Sushi bar hand sink is easily accessible.
