Observation (CORRECTED DURING INSPECTION): Hot holding of Mac and Cheese was at 53C.
Corrective Action(s): Hot holding must be greater than 60C to prevent the growth of pathogens and or the formation of toxins. Mac and Cheese was reheated to 74C and the hot holding unit setting was increased at the time of inspection.

Comments

-Walk-in cooler was at 4C.
-Sandwich cooler was at 4C.
-Under counter cooler (hot food stand) was at 4C.
-Soft serve machine was at 4C. Soft serve machine cleaned and sanitized weekly with a chlorine based disinfectant.
-Hot foods were less than 60C but are held for a maximum of 4 hours and are discarded after 4 hours. Records are maintained regarding the amount of foods cooked and amount of foods discarded after 4 hours. Ensure record sheets have the time on and time discarded boxes completed.
-Wall freezer was at -18C.
-Back chest freezer was at -18C.
-Back upright freezer was at -12C.
-Ice cream freezer was at -30C.
-Probe thermometer available to verify proper cooking temperature of foods.
-Temperatures checked and recorded daily.
-Cleaning and sanitizing carried out in the 2-compartment sink. Quats sanitizer dispenser available and sink plugs available. Drying rack is located above the sink.
-Handwash station by hot food area equipped with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer spray bottle properly labelled and tested at 200ppm.
-Tongs available for self-serve candy. Tongs are placed in a designated area.
-Sneeze guard present on top of hot food area.
-Foods stored off the floor and protected from contamination.
-Canned foods within their best before dates and in good condition.
-Sabra Guacamole snack past their best before date of Aug/03/19 - items were removed from the shelving area.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and sanitary
-Operator FoodSafe Level 1 valid June 3, 2022.
-Health Permit hand delivered to operator. Ensure permit is posted in a visible location.
