Observation (CORRECTED DURING INSPECTION): One knife observed to be stored in the crack between the two sandwich coolers. This is not a sanitary location to store utensils.
Corrective Action(s): Clean and sanitize the aforementioned knife. Utensil such as knife must be stored in a clean food-grade container.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): High temperature dishwasher registered an average 69C at the plate level after multiple runs. At least 71C is required for properly sanitizing plates and utensils.
Corrective Action(s): Set up manual dishwashing at the 2 compartment sink. Dishwasher can be used to wash and rinse the utensils. Ensure sanitizing compartment is filled with 100-200 ppm bleach sanitizer.

Observation: Two dirty bowls were stored in the hand washing station near the cook line. This obstruct the use of hand washing station.
Corrective Action(s): Remove the dirty bowls from hand washing station. Hand washing station must be free of obstruction at all times.

Observation: Various food items stored inside the sandwich cooler and walk-in cooler were not covered.
Corrective Action(s): Food items stored inside the cooler must be covered with a cover made from food grade material such as saran wrap. Correct by: today.

Observation: Grease and food debris accumulation observed at the following area in the kitchen:
1. Under the cook line near the gas stove.
2. Side panels of the two sandwich cooler.
3. On the floor inside the walk-in cooler.
Corrective Action(s): Clean the aforementioned areas and ensure they are maintained in sanitary condition. Correct by: Jan 27, 2020.

- No pest activities observed at the time of the inspection.
