Met with owner and discussed the cooling process:

- he explained cooling precooked items process and observed shallow containers / trays in the cooler beside the cooking station

The hot water is available at the hand sink beside the prep cooler
Faucet knob for hot water has been replaced
Soap dispenser battery replaced
High temp dishwasher reached 82C at the final rinse
Bleach used as approved sanitizer
Daily temp logs - posted and up to date
