Observation: Rodent droppings noted in the following areas:
1) In the back storage area in the corner shelving near the glass doors
2) Behind equipment where the ladder is located
Corrective Action(s): Once lights have been fixed at the back, thoroughly remove all rodent droppings with 1 part bleach, 9 parts water. Continue to work with your professional pest control company to monitor for rodent activity. Maintain the back storage area in organized condition and ensure that any spills are cleaned up immediately.

Comments

Routine inspection conducted. The following observations were noted at time of inspection:
Menu item remains the same: facility offers ice cream and gelato

1) Main Kitchen Space
- Walk-in cooler at 2C
- Walk-in freezers at -18C or less
- Chest freezers maintained at -18 or less
- Hand wash stations (2x) adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
- Gelato machines in good sanitary condition. Chlorinated powder is mixed in to create a 200 ppm chlorine residual solution
- Area is generally in good sanitary condition
- Milk / creamers stored off the floor in the walk-in cooler
- Ice cream toppings are secured in containers with tight-fitted lids - good

2) Ice Cream Dispensing Area (Front):
- Hand wash station adequately stocked with hot/cold running water, liquid soap, single-use paper towels
- Stand-up freezers vary from -15 to -18C
- Stand-up cooler up front at 3C
- Rotary conveyor gelato display freezer currently not operational
- Dipper well currently in use for storage of ice cream scoops

Back Storage Area:
- Chest freezer at -18C or less
- Food products generally elevated at least 6" off the floor
