Observation (CORRECTED DURING INSPECTION): 1. Food residue observed on can opener stored in clean drawer.
2. Food residue observed on internal surface of the soda gun nozzle in the bar area.
Corrective action: Clean and sanitize the can opener and soda gun.
Rationale: Unclean equipment can support the growth of bacteria and production of toxins, which can lead to foodborne illness when equipment is used.

Observation (CORRECTED DURING INSPECTION): 1. No surface sanitizer observed in the bar area for immediate use.
2. Knife was observed to be cleaned by wiping with QUAT sanitizer.
Corrective action:
1. Ensure that there is a surface sanitizer available for immediate use at the bar.
2. Educated staff that knife needs to be cleaned and submerged in sanitizer for a minimum of 30 seconds or per manufacturer's instructions for proper sanitation.
Rationale:
1. Surface sanitizer needs to be available for frequent sanitizing of food contact surfaces to reduce the growth and survival of pathogens and to lower the incidence of foodborne illness.
2. Utensils need to be submerged in sanitizer for a specific contact time to effectively kill the bacteria and reduce the incidence of foodborne illness.

Observation (CORRECTED DURING INSPECTION): Screw driver observed to be stored next to unclean can opener in the drawer.
Corrective action: Remove the screw driver. Ensure that items not required in food premises are not stored in the equipment/utensil drawer.
Rationale: The screw driver is not a food contact surface. Bacteria can contaminate equipment and utensils which can be transferred onto food and lead to food borne illness.

Comments

General observations during inspection.
1. Temperatures
-All coolers (upright, under the counter, walk-in and sandwich) are maintained at 4C or lower.
-All freezers (chest, walk-in) are maintained in satisfactory temperatures.
-Time-tracking observed to be used for food stored in inserts.
-Temperature logs in use and updated twice daily.
-Thermometers observed in refrigeration units.

2. Storage
-All foods are stored off the floor.
-No expired food found during inspection.
-Lights in refrigeration units covered with shatterproof coverings.

3. Sanitation
-All handsinks equipped with liquid soap, hot/cold running water and paper towel.
-High temperature dishwasher sanitizing at 71.7C at utensil surface. Iodine glasswasher measured at 12.5ppm.
-QUATS sanitizer buckets measured at 200ppm. Wiping cloth observed to be stored in the bucket.
-Ice machine in sanitary condition with ice scoop stored in designated container.
-Vent hood in sanitary condition. Next service date is May 2022.

4. Pest control
-No pest activity detected. Professional pest company services premises monthly.

5. Administrative
-One staff onsite has current and valid FOODSAFE Level 1 or equivalent training.
