Comments

- Walk-in cooler measured 4C
- Freezers measured -18C
- Line coolers measured approximately 6-8C; prep and re-fill of coolers occurring between rushes at the time of inspection
- Use empty ingredients to fill in empty slots in the line coolers
- Have less food prepped if necessary
- Have cooler adjusted/repaired if cooler is unable to achieve and maintain 4C
- Temperature logs available for review - coolers were approximately 4C//40F when morning temperatures were taken
- Hot held foods measured 60C or hotter
- Sanitizer measured 200ppm quats
- Utensils stored in ice water
- Dishwashers (main, under the counter, bar) all dispensed 50ppm chlorine
- Pest control in regularly
- Handwashing station stocked with soap, paper towels and hot and cold running water

* Holes in wall in dry storage area; to be repaired as plumbing issue was fixed in this area
