Observation (CORRECTED DURING INSPECTION): 3 boxes of canned tomatoes stored in the walk-in cooler used for storage. Cans have leaked through cardboard boxes and mould growth was observed on the outside of the cans. Operator stated that these cans were for personal consumption.
Corrective Action(s): Discard all 3 boxes of canned tomatoes.

Observation (CORRECTED DURING INSPECTION): Hot water and soap not available at handwashing sink. This is a repeat violation.
Corrective Action(s): All handwashing stations must have hot and cold running water and must be supplied with soap and ppaer towels.

Corrective Action(s): Store opened bags of ingredients in pest proof containers in the processing area.

Observation: Freezer has large build up of ice on the floor from leaking fan assembly.
Corrective Action(s): Operator has stated that the ice is to be removed in the near future. Ensure no foods are stored on the floor to prevent cross-contamination.

- walk-in cooler: 4C
- walk-in freezer: -20C
- other walk-in cooler not turned on (only dry storage)
- no obvious sign of pests - traps laid throughout facility
- general sanitation is satisfactory
