Observation: Trace mouse droppings observed in the following locations: on wall ledge behind upright shelving locker and below on the floor / corner, and on floor near right side of oven and around mop sink.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of food and debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine) after cleaning.

3 compartment sink correctly set-up for manual dishwashing (Sanitizing sink 200 ppm Quat) - refreshed at time of inspection, ensure sanitizer residual is tested to maintain 200 ppm

Walk- in Freezer -3 C, Freezer operation to be monitored to ensure freezer is maintain product at frozen temperatures at all times. Service freezer accordingly.

New monitoring system in place for room temperature display of pizza slices. Pizzas are now displayed for a maximum of 90 minutes at room temperature. Relevant time to discard pizza after 90 minutes is recorded on the pizza labels.
