Handsinks were supplied with liquid soap, hot and cold running water, and single-use paper towels.
Refrigeration units were at 4 degrees C or less.
Walk-in-freezer temperature was satisfactory.
Food storage areas appeared clean and organized.
Hot-held food was at 60 degrees C or hotter.
Sushi rice pH was below 4.2.
Dishwasher final rinse chlorine sanitizer residual was at 50 ppm (minimal required: 50 ppm).
Glasswasher iodine sanitizer residual was at 25 ppm (required: 12.5 to 25 ppm).
200 ppm QUATS sanitizer was available in the sanitizer pails and spray bottles.
2-compartment sink and sink with overhead sprayer were supplied with hot and cold running water. Three sink plugs were available.
Prep. sink was operational.
Deli slicer was in a clean condition.
Ice machine was in a clean condition.
No signs of recent pest activity were evident at the time of inspection.
Staff member on shift held valid FOODSAFE Level 1 course training (expiration date: September 13, 2023).
