Floor underneath equipment, sinks and other areas has been thoroughly cleaned. good.
Internal temperature of most dim sum items in the steamer hot holding unit was 60 C or hotter. However some items ranged from 55-58 C.
Ensure to check the internal temperature of all dim sum items every day and reheat/relocate them as needed.

*Back door must be kept closed at all times.
* Knife storage space in between the wooden chopping block and wall must be kept clean at all times.
