Routine inspection conducted and the following observations were made:
Temperature (coolers to be maintained at 4C or less, freezers at -18C or less, hot holding at 60C or above):
- Front display cooler at 4C
- Walk-in cooler at 2C
- Prep coolers and undercounter coolers under 4C
- Beverage cooler in the back kitchen area at 6C. As per the operator, the cooler is used only for storing beverages
- Walk in freezer at -16C
Storage:
- All food items were stored at least 6" off the floor.
- Chemicals and cleaners were stored separate from food preparation areas.
Sanitation & Maintenance:
- Improvement noted in terms of general sanitation of the facility.
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
Use a pump bottle for dispensing liquid soap.
- Sanitizer pail available and the concentration of bleach noted at 200ppm.
- Low temp mechanical dishwasher used for ware washing. 50ppm chlorine residual recorded during rinse cycle.
- Equipment were maintained in good sanitary condition.
- No grime build up observed inside the ice machine.
- No grease/dirt build up observed on the vents.
Pest Management:
- Professional pest control company conducts routine checks.
- No visible signs of pest activity observed at the time of inspection.
Administrative:
- Operating permit was posted in a conspicuous location.
- Operator has valid FoodSafe Level 1 certificate.
NOTE:
- Operator submitted an updated floor plan in Feb 2022 that was verified during routine inspection. Facility was constructed as per the approved plans except:
Trays with cookies, muffins etc. were displayed on counter in the front service area. Since no hand wash sink is present in the front area, discussion was made with the operator regarding minimal food handling. Only individually packaged non-PHF (shelf stable food products) were permitted to be displayed outside on the counter. As per the operator, no cash handling is conducted in this area.
