Observation (CORRECTED DURING INSPECTION): Cooked chicken in prep cooler under register was probed to be at 10C. Sauces were also probed to be at 10C.
Corrective Action(s): Chicken discarded at time of inspection. Bottled sauces moved to working prep cooler.

Corrective Action(s): All food removed from cooler at time of inspection. DO NOT USE THIS COOLER until it is capable of maintaining temperatures at 4C or colder.

Comments

- Fried chicken in hot holding unit was measured to be at 63C - good.
- Milk and creamer for customer use were stored in cooler at 4C - good
- Raw chicken marinade was not stored out at room temperature
- Raw chicken was stored below ready-to-eat foods
- Pizza dough prep area was clean at time of inspection
- Hole under hand sink in pizza dough prep area has been patched up - good
- Back door was closed at time of inspection
- No evidence of ants were seen at time of inspection
- Cleaning and organizing in back storage area has occurred, however further cleaning and re-organizing still required. See above violations.
