Observation: Food debris accumulation noted on dough mixer and dough flatner. Staff stated that the two machines are cleaned once per week.
Corrective Action(s): Increase the frequency of cleaning and sanitizing the machine mentioned above, more thorough cleaning is required to prevent bacterial growth.

Preparation cooler inserts temperature (food internal) measured 3C, under counter section measure 1C.
Beverage cooler measure 4C or below
Small upright freezer measured -17C
Hot holding unit (pizza) measure 55C, pizza on racks is followed 2 hours discard time.
Steam hot holding unit is not in use during inspection
Handsinks are equipped with hot/cold running water, liquid soap and paper towel.
Walk in cooler temperature at 4C or below.
Walk in freezer at -22C
3 compartment sink available for manual dishwashing (wash,rinse,sanitize), 100 ppm chlorine is used to sanitize dishwares.
100 ppm chlorine is available in the bucket o sanitize food contact surfaces.
General sanitation: refer to above violation, no sign of pest noted during inspection
3 compartment sink available at kitchen area for food preparation
Staff on duty has valid Foodsafe Level 1 & 2 certificates.
