Routine Inspection:
- Walk-in freezer measured at -10C and is being serviced at time of inspection.
- Walk-in coolers measured <4C with raw meats being stored on lowest shelf and cooked food stored on top shelves.
- All coolers are <4C.
- All other freezers are <4C.
- Hot holding of soup measured at >60C (was 84C).
- Cloth sanitizing buckets measured 200ppm of Quats with wiping cloths fully submerged.
- Handwashing stations equipped with liquid soap, single-use paper towels, and hot/cold running water.
- Dishwasher temperature measured at 76.1C at the plate.
- Exhaust canopy maintained in sanitary condition.
- Meat slicer is cleaned in place and in sanitary condition.
- Dry storage area maintained in sanitary condition and being stored off the ground.
- Garbage disposal area is organized.
- No signs of pest at time of inspection.
- Temperature logs being kept and are available for review.
