Comments

Provide copies of your receipts for fish.
Coolers: Fish cooler is being replaced as discussed with operator.
Frigidaire domestic cooler in upper food storage room - air temperature is above 4 C but food temperature is ok.
All other coolers are at 4 C or colder.
Hot holding is at 60 C or hotter (mushy peas, chowder, and gravy).
Reheating - Not checked today. Reheat quickly to 74 C.
Keep daily temperature records for coolers and hot food.
Time track blanched fries so they will be discarded if not used within 2 hours.
Glassware washer has sanitizing rinse (12.5ppm iodine - good).
Chlorine sanitizing rinse; 100-200ppm detected - good.
Premises was closed over winter and has re-opened in March.
