Observation (CORRECTED DURING INSPECTION): Large preparation cooler inserts were measured around 5.2C to 6.9C internally. Lower section was 5.9C (ambient temperature).
Corrective Action(s): Adjust the cooler to a colder temperature or have it services to ensure foods are kept at 4C or colder. Operator adjusted at time of inspection and temperature dropped to 4.9C. Continue to monitor.

Observation: Rat droppings observed in the following areas:
- beside the dishwasher on both sides.
- behind domestic refrigeration unit in the dry storage room.
- underneath the syrup shelf at the back storage room.
Corrective Action(s): Clean up rat droppings throughout premises.
Keep all foods and utensils (eg. napkins) in pest proof bins.
Continue to monitor for signs of rodent activity with licensed pest control.

Observation (CORRECTED DURING INSPECTION): Back door is kept open.
Corrective Action(s): Keep the back door closed or install screens to keep rodents and other pests (eg. flies) from entering the premises.

Observation: Food debris (eg. banana bread, tomato) were found between equipment at the front serving area and storage room with the coolers and freezers.
Corrective Action(s): Thoroughly clean the premises on a regular basis to remove any source of food for pests.

General Comments
Handsinks are all equipped with liquid soap, paper towels and hot/cold water.
Rice cooker/warmer was keeping rice at 61.8C. Monitor the temperature of the rice. If kept between 4C to 60C for more than 2 hours, then discard or rapid cool it down. Follow Food Safety Plan.
All other coolers and freezers are satisfactory.
Dishwasher measure 50-100 ppm chlorine with test strip.
Foodsafe requirement met at time of inspection
Labelled bleach sanitizer spray bottle measured 200 pp, chlorine
Monitor temperatures for refrigeration units to ensure coolers are at 4C or colder and freezers are at -18C or colder.
