Observation (CORRECTED DURING INSPECTION): Gravy observed to be stored in hot holding well next to preparation table. Measured ~25°C.
Staff stated gravy was being reheated in hot holding well.

**Corrected during inspection** Education provided. Hot holding equipment is meant for holding hot products at >60°C. Units generally are incapable of quickly heating products to high temperatures.

Facility has been open for ~30 minutes at time of inspection, so product moved to induction cooktop for reheating to 74°C before placing into preheated hot holding unit.

Observation (CORRECTED DURING INSPECTION): Raw chicken, ready for breading, observed to be stored on counter. No staff observed to be working with chicken at time of inspection. Temperature of chicken read ~10°C.

**Corrected during inspection** Education provided to operator of importance of maintain temperatures of 4°C or less on raw meat products. If staff becomes busy during preparation, chicken is to be moved back into working cooler.

No pest activity observed at time of inspection; professional pest management company contracted for monthly visits. No captures on recent reports.
Overall sanitation of facility satisfactory.
Multiple valid FOODSAFE level 1 or equivalent certificates on display (exp Dec 2028, Aug 2025).
