- Prep cooler at 2 to 3 degrees C (above) and 4 degree C (below)
- 3-door under counter cooler at 1 degrees C
- 2-door under counter cooler at 4 degree C
- 2-door reach in cooler at 3 degrees C
- Front glass cooler at 4 degrees C
- Reach in freezer at -22 degrees C
- Hot holding internal temperatures at 60 degrees C or more
- Thermometers available inside cold holding units. Probe thermometer available on site for internal temperature checks.
- Food is covered and properly organized (raw meats are not stored above ready-to-eat items)
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
- Non-latex gloves available. Staff observed to be properly washing hands between glove use.
- Staff wear clean aprons. Hair control measures in place (hats, hair ties)
- Quaternary ammonium compounds (quats) sanitizer measured at 200 ppm in labeled spray bottles and from dispenser at 2-compartment sink
- High temperature dishwasher measured 81 degrees C at utensil surface during final rinse (minimum 71 degrees C)
- No signs of pest activity observed
- Dry storage areas kept in sanitary condition
- Temperature and sanitation logs are maintained daily. No concerns noted.
- Washrooms in clean condition and hand sinks are well supplied.
- FOODSAFE requirements met at time of inspection. Certificate produced for verification expires in 2023.
