- Violations noted on Inspection Report DNGG-CZC2UX (dated 9-Jan-2024) have been addressed and corrected.
- Required cleaning has been completed.
- Continue to work on regularly maintaining a high level of sanitation at all times.
- Low Temperature Sanitizing Dishwasher: 50 ppm chlorine residual.
- Fish Soup (approximately 4L container) stored submerged in ice. Internal Temperature of soup: 4C
- Discussed with operator - best practice to consistently maintain potentially hazardous food at a safe temperature would be to use mechanical refrigeration or mechanical hot holding. At this time, as long as soup is maintained at or below 4C, ice method is acceptable.

- Operator has registered for FOODSAFE Level 1 class on 29-Jan-2024. Provide a copy of valid certificate to the undersigned once operator has successfully taken and passed the course.
