304 - Premises not free of pests [s. 26(a)]
Observation: Drain/fruit fly issue continues to be a significant problem. Has gotten worse since initial inspection when they were observed and appears out of control. Observed in the following areas of premises:
- Staff change room, especially in "out of order" toilet room - extreme (picture taken);
- Bar area, especially at far end - extreme (pictures taken);
- Dish pit - moderate;
- Chemical and mop sink room - significant;
Also noted in secondary areas including food prep station in back of premises.
**Reviewed Pest Control invoice. No recommendations noted. Only inventory of traps deployed/assessed.
Corrective Action(s): Obtain set of comprehensive recommendations from Pest Control to substantially reduce fly population in premises as noted above. Develop a comprehensive plan in consultation with pest control, including "next level" interventions.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Observed the following areas in an unsanitary condition:
- Under the grill line in main kitchen area;
- Dish pit area;
- behind ice machine;
- shelves and beverage dispensing units (discussed and identified to bar manager);
- floor drains in association with glasswashers.
Corrective Action(s): Clean the kitchen floor under the cook line. These pieces of equipment are on wheels and should be moved regularly as part of the cleaning process.
In an effort to improve the fly infestation, all above identified areas should be targeted for complete cleaning and secondary areas also should be reviewed and cleaned up as necessary. **Seek Pest Control for advice in this area.
This will be reviewed at follow up inspection date noted on report.

One of the prep coolers down at time of inspection and ice in play for temporary purposes to keep foods cold.
**Make sure to use stainless steel inserts between ice and food product to ensure best exchange of temperatures and replenish ice often.
