Observation: Food debris accumulation noted in the following areas:
- In corners and hard-to-reach areas, under storage shelves/racks, under sinks in the dishwashing area, etc.

Observation: 1) Walk-in freezer has been added to the facility. No floor plan drawing has been received for this change.
2) A small self-serve buffet station has been added to the front area.
Corrective Action(s): Any change to the kitchen layout involving equipment and/or renovation must be submitted to Fraser Health for approvals prior to making the change. Submit an updated floor plan drawing reflecting your current kitchen layout, ensuring to label all equipment and areas.

Comments

- Hand washing sinks were properly supplied with hot/cold running water, liquid soap, and paper towels.
- Bleach sanitizer solution available at 100 ppm (chlorine residual) in sanitizing pails.
- Coolers measured 4C or colder.
- Freezers measured -18C or colder. *Note: a new walk-in freezer has been put in. Updated floor plan drawings to be submitted - see violation code 311 above.
- A new lunch buffet station has been set up. *Need updated Food Safety Plan and updated floor plan drawings - see violation codes 212 and 311 above.
- Hot-held food items at the buffet station were measured at 60C or hotter.
- Cold-held items at buffet station measured between 4C - 8C. Buffet service only lasts 2 hours, and leftovers are not reused. *Ensure ice slurry level for cold-holding at buffet station is high enough for the inserts/wells to be submerged in the ice slurry.
- Ice machine and ventilation canopy noted to be clean.
- General sanitation satisfactory, however hard-to-reach areas require deep cleaning. See violation code 306 above.
- Pest control in place. No signs of pest activity noted at time of inspection.
- Staff onsite had valid Foodsafe level 1 certification.

- High-temperature dishwasher reached 73C at the dish surface during rinse cycle. Good - minimum of 71C at the dish surface required. **Operator indicated there is an issue with water pressure supply at the dishwasher connection. Staff were observed to be manually adding water to dishwasher during the fill phase. Operator stated that the source water pressure at the dishwasher connection is currently not adequate and so dishwasher is being filled manually to mitigate the issue. Operator to provide health inspector with additional information regarding this issue during follow-up inspection on April 25th. Dishwasher should not be filled manually; dishwasher is to be operated in accordance with manufacturer's instructions.
