Corrective Action(s): Repair the piping so that waste water is properly disposed of. Plumber has been called at the time of inspection.

Observation:
1) Boxes of meats stored directly on the floor in the processing room.
2) Meat marinating was taking place in the shipping room.
Corrective Action(s):
1) Foods should be stored at least 6 inches/15cm off the floor, even when in the processing room.
2) Meat marinating must take place in the processing room.

Observation: Holes observed in walls by the shipping door.

Observation:
1) Blood and other food residues noted on the walk-in freezer floors.
2) Boxes of meats stored haphazardly in the walk-in freezers; unable to access parts of the freezer due to the piles of boxes.
Corrective Action(s):
1) Clean and sanitize areas noted.
2) Organize the boxes so that they are at least 6 inches/15cm off the floor and ensure that all parts of the freezer can be accessed.
