Observation (CORRECTED DURING INSPECTION): - No food-contact surface sanitizer was available in the main kitchen area.
- Sanitizer bottle for front area had 0 ppm chlorine (bleach) detected.
Corrective Action(s): Operator prepared fresh bleach solution for the front and back kitchen at time of inspection.
Ensure to mix 1 tsp of bleach to 1 litre of water for proper concentrations.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Both designated hand washing stations in back kitchen were missing paper towels.
One hand sink was supplied with a reuable cloth towel.
Corrective Action(s): Do not use reuable towels for drying hands. Operator supplied both hand sinks with paper towels at time of inspection.

Observation (CORRECTED DURING INSPECTION): Ice scoop was stored directly in ice bin.
Corrective Action(s): Store all scoops in designated scoop holders, such that handles do not come into contact with the food.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: - Two ovens have been added where the designated food prep sink was previously located.
- Hand sink near dishwashing area has been replaced with a two-compartment sink (one compartment for food prep, the other compartment for hand washing).
Corrective Action(s): Submit an updated floor plan to Fraser Health. Changes to floor plan layout are not to occur without first obtaining health approval. Ensure updated floor plan is properly labelled and shows all equipment.
One compartment of the new two-compartment sink must be designated for hand washing only - no food prep to occur in this compartment.

Comments

- Hand sink in front server area was properly supplied with hot and cold running water, liquid soap, and paper towels. Both hand sinks in back kitchen were missing paper towels (see violation code 401 above).
- Dishwasher dispensed 100 ppm chlorine to dish surface, detected after rinse cycle. Test strips available for monitoring. Ensure test strips are used to check dishwasher daily.
- Two prep coolers, walk-in cooler, and bar cooler were measured at 4C or colder.
- Prep freezer and chest freezers were measured at -18C or colder.
- Accurate thermometers available for use.
- No hot holding at time of inspection.
- Food storage practices satisfactory; all food stored properly covered. Good separation of raw and ready-to-eat food items.
- Equipment maintained in sanitary conditions.
- Dry storage room satisfactory.
- No signs of pest activity noted at time of inspection.
- Foodsafe certified staff on-site.
