Observation (CORRECTED DURING INSPECTION): Bleach sanitizer solution in all sanitizer spray bottles were too strong, bleaching out the test strip.
Corrective Action(s): For a concentration of 100 ppm chlorine residual, mix only 1/2 teaspooon of bleach per litre of water.
Operator diluted sanitizer solution at time of inspection.
Ensure to re-train all staff on proper mixing instructions. Instructions are also available in the poster above your three-compartment sink.

Observation: Three-compartment sinks are labelled incorrectly for manual warewashing.
Corrective Action(s): Remove labels and re-label such that equipment and utensils are washed from a flow of dirty to clean areas. Sinks should be labelled: 1) Wash 2) Rinse 3) Sanitize.
As this sink is also set up for hand washing, ensure hand washing only occurs in the dirty/"wash" sink, and not in the clean/"sanitize" sink.

- Freezers measured -18C or less.
- Temperature records available and up to date. All coolers and freezers equipped with thermometers.
- No hot-holding. No pizza by the slice.
- Food stored properly off the floor, covered and protected from contamination.
