Correction: Immediately. Provide paper towels fro the front and kitchen handwshing sinks.

Observation: - Surface sanitizer is unavailable at the time of inspection.
- Dirty/with food debris like dried mushrooms/ vegetable cutter noted in the kitchen at the tome of inspection.
Correction: Immediately. Provide a surface sanitize for front prep. area and kitchen (egg., bleach/chlorine/ at 100ppm; or/and Quat at 200ppm).
Properly clean and sanitize all equipment; do not leave it dirty.
Comments

- All handwashing sinks properly supplied with liquid soap and paper towels; hot/cold running water.
- Surface sanitizer - available (Quat at 20 ppm).
- All utensils stored in a sanitary manner.
- Preparation is performed at the dedicated work stations.
- Equipment - clean.
