Observation (CORRECTED DURING INSPECTION): 1. Opened package of ham observed to be stored beside handwashing station. Product measured 15.3°C. Staff stated product was placed on counter for 5 minutes.
**Corrected during inspection** As product is unlikely to warm to 15°C within 5 minutes and staff was unable to identify the time the product was left on the counter for, product was voluntarily discarded as per approved food safety plan.

Do not store potentially hazardous products at room temperature. If store becomes busy while preparing the potentially hazardous food, the product is to be returned to a working cooler.

2. Proteins in Sandwich Preparation cooler measured around 8°C - 10°C.
**Corrected during inspection** Staff returned warmest products to working cooler. Lids to the unit closed when temperature identified.

Ensure staff understand the importance of keeping the lids to sandwich preparation tables closed.

**Corrected during inspection** Loaves moved to cooler during inspection.

Do not store bread in a place where it can easily become contaminated.

2. Black garbage bag observed to be on top of soft drink syrup storage.
**Corrected during inspection** Manager removed bag from syrup room. Found to be recyclables.

Do not store garbage above food materials.

Storage:
All food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Storage area was well-organized.
Chemicals and cleaners were stored separate from food preparation areas.
