306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
There is accumulated grease and food on the floor; along the back of walls behind equipment, tables, and/or counters in the main cooking areas; and on legs and/or wheels of equipment and tables. This will attract and harbor pests (rodents, flies, cockroaches).
Corrective Action(s):
Clean the mentioned surfaces and areas today, and ensure they are cleaned every day to remove grease and food debris. Ensure staff are pulling equipment away from the walls so the floor and back walls can be washed clean.

Observation:
The wall mounted freezer, storing chicken nuggets, has accumulated ice on bottom of the exterior surface of the freezer. The ice or melting ice could fall on food that is placed below it, contaminating and possibly causing people to become ill.
Corrective Action(s):
Call a maintenance person in to repair or replace the freezer, so that ice doesn't accumulate on the outside surfaces of the machine.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C or colder; freezers -21C or colder; hot holding units above 60C; thermometers present; and temps recorded daily.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Cloths in sanitizing buckets had [Cl2] of 200ppm. Test strips present and used.
- 3-comp sink had Quats sanitizer at 200ppm strength. Test strips present and used.
- All foods stored in food grade containers; covered; labeled; date coded; foods stored in groups; and foods stored 6" off the floor on shelves, racks or platforms.
- No expired foods in use or for sale. FIFO rules being followed.
- FoodSafe certified, or equivalent course, persons present.
- General sanitation level is good. Improvement needed in the mentioned areas. Exhaust hoods and filters are clean.
- No signs of pests.
- COVID-19 measures in place, such as: signs posted on door; physical distancing markers on floor and on tables; hand sanitizer available to staff and customers; staff complete health screening prior to shift; and masks worn by staff and customers.
- Discussed inspection results with the Asst. Manager, no signature obtained due to the pandemic.
