Observation (CORRECTED DURING INSPECTION): Hot-held in-use rice scoop observed stored in room temperature water in a container during inspection.
Corrective Action(s): Place all in-use utensils in ice water bath and sanitized every 4 hours (minimum) to prevent bacterial growth and/or toxin production on utensils and to prevent foodborne illness.

Observations:
- Display cooler at 3'C
- Sushi display cooler at 4'C
- Sandwich cooler along cooking line at 3'C (top and bottom)
- Chest freezers at or below -18'C
- Hot-held rice and soup measured above 60'C
- General sanitation is good during inspection
- Hand washing stations are unobstructed and supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher measured at 76'C at plate surface (above minimum required final rinse temperature of 71'C)
- Bleach sanitizer in spray bottle measured at 200 ppm chlorine concentration
- All food observed stored covered and at least 6 inches off the floor
- Raw meat stored away from ready-to-eat foods
- No signs of pests during inspection
- Staff observed wearing clean uniforms with hair control
- FOODSAFE Level 1 trained operator available on site during inspection (EXP: Oct 21, 2027)
- Permit posted in a conspicuous location on site
