Observation: Gap noted under the back exterior door.
Corrective Action(s): Close the gap to keep out pest. Carried out the other pest exclusion measures that you have identified. Continue to remove unused equipment from the warehouse area. Operator has contracted a professional pest control company to provide service.

Routine inspection.
General sanitation is satisfactory.
Overall improvement noted to general organization and layout of the premises.
No concerns noted with the kombucha making process as described. There was no production at the time of the inspection.
pH is measured during the fermentation process and is recorded on a log sheet which was available to view.
Alcohol content of finished product is tested at an external lab. Please email me the results for the past year.
Ensure bleach sanitizer level is not excessively high. Should be 100-200ppm. Obtain test strips to monitor levels.
Temperature of refrigeration unit is satisfactory.
Handwashing stations are satisfactory.

Operator has obtained CFIA registration to export dry tea leaves from this facility. The leaves are also used as ingredients for the komucha production. Packaging of the leaves will be conducted in a separate area of the building.
