Observation (CORRECTED DURING INSPECTION): One bottle of hand sanitizer was stored beside bottles of sauces at the back storage area.
Corrective Action(s): Manager move the hand sanitizer away from food. Do not store chemicals beside food.

Observation (CORRECTED DURING INSPECTION): Frozen smoked fish was thawing at ambient room temperature . Food temperature measured at 1C.
Corrective Action(s): Manager moved the smoked fish back into the freezer. Frozen food must be thaw properly under cold running water or inside a functional cooler.

Observation: Accumulation of debris noted at the back storage area, especially under the coolers and freezer.

- Coolers (sandwich, stand-up) maintained at 4C or less.
- Stand-up and ice cream freezers functional.
- Rice hot held at above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm bleach sanitizer available in spray bottles.
- Low temperature dishwasher dispensed 50 ppm at plate level.
- Temperature records sporadically maintained. Ensure temperatures are maintained on a daily basis.
