Observation (CORRECTED DURING INSPECTION): Mechanical dishwasher - Chlorine is not coming through in final rinse (0 ppm detected), even with full bottle of sanitizer and after priming. Note: This kitchen has been closed since early September and is closed today.
Corrective Action(s): The mechanical dishwasher must be able to provide a final sanitizing rinse of 50ppm.
Correct as soon as possible but in the meantime, use the dishwasher to wash and rinse and manually sanitize dishes and utensils using 100ppm chlorine (1 tsp domestic bleach per litre or 1 ounce per gallon water). Soak for 2 minutes and air dry. Verify concentration using your test strips and record daily.

Discussed monitoring for pests.
