- Prep coolers line coolers are all measured at less than 4C
- Upright 2 door freezer measured at or below -18C. Upright freezer in storage room measured at or below -18C.
- Thermometers available in all coolers and freezers.
- Temperature monitoring log is to be kept updated daily.
- Dishwasher is measured dispensing 50ppm chlorine solution during final rinse cycle
- Food contact surface sanitizer is available at 200 ppm QUATs in spray bottles properly labeled and at dispenser
- Dry storage maintained. Food stored above the floor.
