Observation: Cardboard lining racks, work surfaces, and floors still need to be removed.
Corrective Action(s): Do not use cardboard to line surfaces, as cardboard is absorbent, non-durable, and cannot be easily cleaned.

Comments

- Scoops no longer being stored inside dry ingredient bins. Ensure to consistently remind/train staff.
- Operator has created a schedule system for getting all dry ingredient bins cleaned and sanitized. Ensure to properly track which bins have been cleaned and which are due for cleaning. Operator stated once bins have been cleaned, they will be labelled with dates cleaned.
- Daily cleaning schedules for each department have been created - copies obtained
- Yogurt containers are no longer in use as scoops. Discard any remaining yogurt containers. Operator stated new reusable scoops have been ordered.
- Operator has created a log of which employees need to take the FOODSAFE refresher course.

*Follow-up inspection to take place next week to check on further cleaning progress.
